 18 FEBRUARY 2023 Hi besties, welcome to my blog. Today, I will be sharing recipes on how to make Nigerian puff puff. Puff puff is a popular street pastry in Nigeria, loved by everyone. It is a deep-fried dough, fluffy and soft. In Nigeria, everyone is excited at the mention of puff puff. You can only imagine how faces light up on seeing puff puff on the table as an appetizer in ceremonies. At that point, it's survival of the fittest. You snooze, you lose!  As a growing-up child, I would save all the money given to me by elderly people after running errands for them or by friends of the family who came to visit. I would use all of this to get some balls of puff puff. None of it ever made it back home with me. I would eat it all even before I walked halfway home. Hi guys, welcome to my blog. I will be sharing recipes on how to cook the signature Nigerian smoky Jollof rice. Jollof rice is not only popular in Nigeria but is well known in other parts of West Africa including Ghana, Ivory Coast, and Gambia. 

In Nigeria, Jollof rice is a special delicacy. Like, what is a party without Jollof?   Everyone looks forward to eating a plate of Jollof rice at birthday parties, weddings, Child dedication ceremonies... Name it!  No one is ever happy attending a party without getting a plate.  As a matter of fact, the Jollof rice we cook at home is not the same as what we get at parties. Everyone looks forward to the party jollof ! 

On today's episode, we will be learning how to cook the special smoky party jollof from the comfort of your home.  Jollof rice can be served with fried ripe plantain popularly known as "dodo". You can also garnish with any meat of choice including Beef, Chicken, Turkey, or Goat meat. 

 There has been an ongoing debate between Nigeria and Ghana on whose Jollof tastes better. Ghanaians argue that their jollof is better while Nigerians will die on the hill that their Jollof is the best. Please don't ask me whose Jollof tastes better because "Naija no dey carry last" 

 In subsequent posts, I will be sharing recipes for Ghana Jollof rice so you guys can try it out and tell me what you think. I urge you to stay tuned to my blog to see more exciting recipes.

INGREDIENTS

  • 700g of rice
  • 2 big bell pepper 
  • 5 Plum tomatoes 
  • 3 Scotch bonnet pepper
  • 120g  tomato paste
  • 2 cups chicken or beef stock
  • 2 bulb onions
  • 1 medium-sized ginger root
  • 4 tbsp butter
  • 150ml cooking oil
  • Bullion cubes
  • 3 bay leaves
  • Salt to taste 
  • 1 tsp curry
  • 1tsp thyme
  • 1 small onion for garnishing
  • 1 Medium size tomato for garnishing
  • 1.5 tbsp White pepper
